I know, I'm late to post a lunch for Friday! I DID have a recipe made but could not find the time to post it (oh, the excuses). No, really- you can read why here. Teeny fortunate mishap aside, a new stardate has arisen and brought my hunger for a nifty baked potato. Don't be fooled by the absurd perplexities our society has dared call a 'baked batato' because mine will change the world- one animal lover's taste buds at a time. If you've ever made deviled eggs, you can absolutely pull off this recipe.
Fun starch fact: Special potatoes calledQuantum Tubers™ were grown by NASA in 1995 on Space Ship Columbia. They discovered potatoes grown in space have reduced disease/pest-related crop failure, so they can multiply year round. Maybe one day we will buy Martian taters in bulk!
Until they can find a way to grow pre-baked potatoes outside of Romulan territory, we'll just have to make them ourselves.

- 1 large potato
- fillings (olives, tomatoes, jalapenos, onions,vegan cheese, spinach, etc.)
- toppings (hummus, vegan sour cream, chives, vegan cheese, 'bacon' bits, salsa, vegan butter, etc.)
Preheat your oven to 400 degrees F.
I had this on Friday with some (burned- oops) corn chips made by slicing my corn tortillas and baking them at 350 degrees F until they were crispy.
- Wash the outside of your potato with warm water to get all the dirt off. Poke it with a knife a few times for ventilation (unless you want to clean up the exploded remains in your oven) and place it in the oven for an hour, flipping it over after the first 30 minutes.
- Unwrap the hot potato and leave it on the foil. With a clean knife, cut an X across the front. Gently push on both ends to open it up.
- Use a spoon to scrape out most of the inside into a separate bowl. Leave some potato on the skin or it will collapse on you! Fold in your fillings to the bowl until you get a mashed consistency
- Scoop the potato filling mixture back into the skin. Wrap the whole thing (without foil) in plastic wrap before placing into your lunchbox... otherwise continue to the next step.
- Dress the baked potato with some toppings. That's it!

** TIP: I'm not living in space yet, so I still use a microwave for everything. Restuffed potatoes reheat wonderfully when nuked for 3 minutes- and that's in a microwave cram-packed with Hot Pockets, t.v. dinners,and old steak leftovers!
