Monday nights are the absolute WORST of times for me to prep a tasty lunch for the upcoming day. 9 pm after band practice trying to fry gourmet cuisine looks a lot like an episode of Hell's Kitchen, so I keep things simple. Just a few ingredients that practically cook themselves meld together in this homestyle favorite- no animals cooked in the making!
It's not quite spaghetti, but not mac and cheese either... more like Greek food married an Italian dish and had some hybrid alien baby. I love (excuse the bragging here) how my tomato pasta sauce turned out tasting exactly like a jar of Ragu. The hasty macaroni elbows are crowned with a generous scoop of hummus for a nutty, cheesy flavor. It's just amazing, I promise!
What you need for the sauce:
For the spaghetti:
- 1 ripe tomato
- Basil, salt, pepper
- 1 tspn vinegar
- 2 Tbsp water
For the spaghetti:
- 2 Tbsp hummus
- Cooked macaroni elbows (takes about 10 minutes to make)
For the Ragu-like sauce, all you need to do is:
- Heat a small saucepan on medium high heat. Allow it to warm uo while you prep the sauce ingredients.
- Roughly chop a tomato into halved wedges. Place them into a cup with the water, vinegar, and spices.
- Pour cup ingredients into the heated pan and allow it to boil and simmer uncovered for about 20 minutes. A nice, thick consistency should develop as the liquid evaporates. Stir occasionally.
- Take sauce off heat and allow to cool for a few minutes before ladeling into any container.
Now, scoop a bit of hummus (recipe found here) onto your elbows- the pasta- and store in a container for lunchtime! It reheats quick in the microwave, just pour the warmed sauce on the heated pasta and you've got your Greetalian concoction to fill the room with an irresistible herbed scent!
