Spiced Oatmeal Apple Fritters... I've been trying to figure out what to call them all day! Every time I take a bite it's like I'm transported back when I was 5. My dad and I would walk in from the cold Washington drizzly outdoors to a warm bakery. Glass displays held stacked baskets filled with golden rolls, artisan scones, doughnuts, and muffins galore! Being a crazy little tyke I'd immediately press my face up to the shelves holding the fresh maple frosting-laden sugar pastries and monster glazed twists of apple cinnamon bread- Oh, if only I could share the smell here! All my recipe needs is a simple glaze and I'm drawn straight back into nostalgia!
It's more soft and fluffy than a cookie but too thin to be a biscuit or a bar, and too chewy to be baked oatmeal. I wanted something sweet and simple for my birthday lunch- little did I know my friends all decided to buy me strange sodas and Nutter Butters (I REALLY REALLY love peanut butter). They practically fed me a meal! I love my friends so much! These apple fritters are dense with oats in a fluffy almost cake-like base, perfectly filling and rich like a bakery dessert, but healthy!
- 1 cup oat
- 1 1/2 cup flour
- Cinnamon, nutmeg, salt
- 1/4 cup brown sugar
- 1 tspn baking soda
- 2/3 c hot water
- 1/3 applesauce
- 1 Tbsp vinegar
Preheat your oven to 350 degrees F.
- In a large bowl, combine all dry ingredients except the baking soda with the hot water. The hot water will soften the oats so they will be chewy and moist and not flourey.
- Fold in the applesauce, vinegar, and baking soda and briefly whisk to incorporate. You don't want to overmix the batter! Set the bowl aside for 5 minutes so the baking soda and vinegar can activate tiny air bubbles.
- Scoop golf ball size rounds about 2" apart onto a lightly oiled and foiled cookie sheet. Use the back of a fork to gently squash the rounds into a cookie shape.
- Bake for 18-20 minutes or until they are golden and chewy. If you poke them they will still be slightly spongy.
- Set your fritters on a cooling rack for at least an hour before packing into your lunchbox. You don't want soggy globs of fall flavored oat and appley goodness!
So versatile and yummy- I topped mine with crunchy peanut butter. Mix in a little almond milk with a handful of powdered sugar for a quick glaze dip! Or you could just gobble them up as-is!
