Not trying to brag or anything but this summer I got really good at making quick vegetable broths that seamlessly replace chicken stock. I originally intended on making a creamy Campbell's chicken and dumpling soup copycat, however I caught myself mindlessly tossing spaghetti noodles into the broth like some telepathic force was melding through my self control abilities! I did manage to drop in those delicious dumplings... and the whole mess turned out fabulous for stormy fall weather!
Really there's nothing to it. Broth, veggies, noodles, and dumplings! The only thinking required is to choose to eat it with a spoon or a fork. Or a spork. Or a fpoon... oh dear...
For the soup
- 1-2 handfuls chopped vegetables
- 1 Capful of Tablespoon vinegar
- 2+ cups water
- 1 tsp each; salt, lemon pepper seasoning, sage, allspice, mustard
- A small bunch of spaghetti snapped in half
- 1/4 cup flour (any kind)
- 1/3 cup soymilk + 1 tsp vinegar
- Hot sauce or red pepper flakes
1. In a soup pot over high heat, stir vegetables until their colors start to get more vibrant. You don't want to soften them; simmering will soften them later.
2. Add the vinegar, 2 cups of water, and spices. Bring it all to a boil, then reduce heat to medium high and cover.

3. To make the dumplings, combine vinegar and soymilk to make a vegan buttermilk. The vinegar curdles it a little to make a thicker tangy consistency. Combine the 'buttermilk' with your flour and hot sauce. You should get something like pancake batter from it. I would not suggest making breakfast pancakes from this mix though!
4. While the soup is still boiling, drop the dumpling batter small spoonfuls at a time into the pot. DO NOT STIR THE POT UNDER ANY CIRCUMSTANCES! (Doing so will result in gravy with no dumplings) Re-cover the pot and allow it to simmer on medium heat amok time-- about 20 minutes.

Soup's done! You can enjoy it with soda crackers like a normal person or... have a side of cute little honey bunnies!!
