About four months ago I made a huge pizza and I had tomato sauce left over. I thought "pizza would be perfect for VLC! It's fun and picky eaters can conveniently change the toppings and..." Then I checked the fridge. Upon opening said jar of tomato sauce a huge white fluffy mass of [mold] sat happily afloat my pizza base. How opportune! So I came up with the next best way to make mini pizzas with less sauce (Don't judge- I had to use ketchup in lieu of it. Still tastes great!). Now we have for you cute little pizza slider muffins! No joke, this is probably the easiest, fastest recipe I've done on here.
For the dough:
- 1/2 c Flour (any kind)
- 1/2 tsp Baking soda
- 1-2 tsp Vinegar
- 1/3 c Water
- packet of chicken seasoning from a restaurant (optional)
Preheat oven to 350 degrees F.
Whisk in the wet ingredients with the combined dry ingredients. An airy cookie-dough-like consistency is what you are looking for, so add water if it's too dry or flour if too wet.
Line 3 cups of a muffin pan with foil squares or just use non-stick spray. Glob a spoonful of dough into the three cups.
Pop the muffin pan into the fridge for a few minutes while you get your toppings.

To assemble pizza muffins:
- Press center of the dough globs down 1/2 way with your thumb. This is a pocket for the toppings so they don't fall off while baking.
- scoop a little pizza sauce (or ketchup, no shame) into the pocket.
- Push your toppings down into the sauce. You don't need to be too gentle- the dough will poof up in the oven.
