Before I posted this recipe, I was contemplating making one for the potato soup I made for dinner last night instead. It looked gray and bland but it was oh so thick and creamy! And just garnished with 'bacon' bits and parsley... Gosh it was great. I'm really kicking myself for not taking pictures and sharing! I will eventually. Promise! In lieu of that soup, I have a more 'season appropriate' soup and granola topping you're going to love...
So Friday I was going to post vegetarian meatloaf, but I miscalculated the cook time by over three hours as a result of me skimping on a few ingredients (yes- including meat HAHA). I'm no chef, but I'm determined to get the right recipe to you ASAP because it was still awesome! With all that cooking time, I searched Pinterest for recipe ideas- should have figured by now almost all of them have pumpkin spice involved for fall! The thing is, I don't want pumpkin soup or pie just yet. I want fluffy Swedish cinnamon rolls called kanelbullar (CAN-al-boolar) that my family has made for forever. Hmm... maybe you know where I'm going with this? Sweet pumpkin puree + kanelbullar = fluffy flaky spiced heaven rolls!
Yesterday I had my birthday. I didn't want to cook or clean- so lazy!! I literally had leftover cookies and a bunch of bananas for dinner. As a result of said extreme laziness, my lunch was also super 'thrown together'- as in ole' faithful sandwich and whatever fruit was laying around the kitchen. Peanut butter and jelly is so last season though... This time I'm using apple butter.
What can you change in 30 days... It's just enough time to gain or lose a habit- check out shetakesontheworld's video above! Sunday morning- my ONLY day to relax, ride my beloved bike, and update blogs. I didn't want to eat a quick bowl of cereal in front of the t.v. I wanted something nostalgic and truly filling, and quick that I could plop back onto the bed with. Solution? Paaaaaaaaancakes of course! They only require 5 ingredients and about fifteen minutes of your precious time. Give the food synthesizer a break Scotty (Star Trek fans would get that one)!
What's twisty, tasty, and easy to eat on the run? Soft pretzels- without the animal products!! These things take only about an hour to make (includes prep time) and you can't mess them up. Seriously, they go with anything.
