Sunday morning- my ONLY day to relax, ride my beloved bike, and update blogs. I didn't want to eat a quick bowl of cereal in front of the t.v. I wanted something nostalgic and truly filling, and quick that I could plop back onto the bed with. Solution? Paaaaaaaaancakes of course! They only require 5 ingredients and about fifteen minutes of your precious time. Give the food synthesizer a break Scotty (Star Trek fans would get that one)!
All you need to whip up some quick fluffy flapjacks is
- 2 c Flour
- 1 tsp Baking soda
- 2 tsp Vinegar
- 1/3 c Applesauce (sub mashed banana or just skip this ingredient)
- 1- 1 1/2 c Non-dairy milk
In a bowl, preferably a measuring cup to pour the batter, combine dry ingredients. Pour applesauce (if using- just gives them a slight texture), 1 cup milk substitute, and vinegar on top. Use a fork or whisk to fold in more non-dairy milk until a good pancake batter forms: It should be a little clumpy, thick, but runny enough to be spread into a large disk on the griddle/pan. Set batter aside to develop for 5 minutes.
Meanwhile, heat a large lightly oiled skillet on medium-low heat or set your griddle to 275 degrees.
Scoop batter a couple of heaping globs at a time into the pan (same for griddle, just do more than one pancake at a time) and allow the bottom to turn golden- about 1-2 minutes on each side.
Decorate pancakes with mole asse-I mean molasses, syrup, frozen fruit, PB&J, chocolate chips, sprinkles, dry pudding mix, oreos, whatever you want baby!
